In a large pot, heat the olive oil over medium heat. Add the onion and green peppers and cook until softened, about 5 minutes. Add the garlic and cook for an additional minute. 2. Stir in the cumin, coriander, oregano, salt, black pepper, and cayenne pepper. Cook for 1-2 minutes more, until fragrant. 3. Add the tomatoes and their juices, and use a wooden spoon to crush them against the side of the pot. Bring the mixture to a simmer, then add the shrimp, mussels, crab meat, and duck pieces. Reduce the heat to low and let the stew simmer for about 30 minutes, or until the shellfish are cooked and the duck is tender. 4. Taste and adjust seasonings as needed. Serve hot, garnished with chopped cilantro and lime wedges. | |
